Malt Hops Yeast Liquor Priming Sugar Maturation Tradition
MALT
The only brewery to use 100% Golden Promise barley, specially grown in
Scotland. One of the last to specify the traditional standard of Pale Ale malt.
One of the few of its size to use floor made malt.
HOPS
All leaf hops used are of the finest grade. Timothy Taylor uses premium grade
hop cones called "choicest" if possible. The traditional varieties
have remained unchanged for over seventy years to produce classic aromas on
the beers - as beer used to taste.
YEAST
The yeast is a unique strain to Timothy Taylor's Brewery. It has produced
over thirteen hundred generations of continuous quality to make Taylor's beers
refreshingly reliable. The fermentations take a minimum of seven days to allow
time to produce a full flavour.
LIQUOR
(WATER)
Only well liquor that is drawn from deep under the Pennines is used at The Knowle
Spring Brewery. It always remains constant in both temperature and quality.
PRIMING
SUGAR
Timothy Taylor is one of the last breweries to use Priming Sugars in its
draught beer. This is the traditional way to give zest and condition to sparkling
beers.
MATURATION
The beer is left in the cellars for at least a week prior to direct delivery
to our customers. This allows more time for the complex and subtle flavours
to develop.
TRADITION
Each member of the Timothy Taylor workforce holds a key position dedicated to
ensuring that "The Taylor Taste" remains unaltered. Many of the present
staff have followed their forebears into the business, making Timothy Taylor
a family concern at all levels.
